Do you know what one of the best things about adulting is? We can make our own choices.

Last night's dinner was pretty special.

I had banana, chia seed, and blueberry pancakes, with lashings of maple syrup and sliced mango. Nope, they weren’t for dessert. They were my main meal. And they were friggin delicious. I highly recommend having pancakes for dinner once in a while. It’s fun.

Ingredients

  • 1 cup of plain flour
  • 1/4 cup of chia seeds
  • 500ml of non-dairy milk (I used oat milk)
  • 1 or 2 bananas
  • 1 cup of blueberries — frozen or fresh
  • Mapel syrup and any fruit to serve

Add all the ingredients into a bowl, minus the blueberries. If you have a hand whizzer, get whizzing.
